Injerra Facts:
Injerra is a sourdough type of flatbread that is used in lieu of utensils and is typically made from Teff (please see the note at the bottom of the page).
- Teff is a nutritious grain which is minute in size and grown most commonly in Ethiopia.
- Teff contains high levels of calcium and iron, is high in protein as well as fiber and is an excellent source of amino acid composition with lysine levels higher than that of wheat or barley.
- Teff contains no gluten so it is appropriate for those with gluten intolerance.
- Teff is believed to have originated in Ethiopia between 4000 and 1000 B.C. and still provides over 2/3 of the human nutrition in Ethiopia.
- Teff is still relatively unknown as a food crop elsewhere although it has been marketed as a health food product in the United States in recent years.
